Recipe :: Cookie Roll




Ingredients
1 can crescent rolls (pinch together seams)
8 oz cream cheese, room temperature
1/3 cup sugar
2 tsp vanilla
1 cup mixed white and chocolate chips

Directions
1. Beat sugar, cream cheese and vanilla together until smooth and creamy.
2. Unroll the crescent roll.
3. Spread the cream cheese mixture over the top of the crescent sheet.
4. Sprinkle your chips on top of cream cheese.
5. Roll the crescent sheet up tight, then cut into 1/4 inch slices (you can choose to freeze the roll beforehand, to make cutting easier... I didn't mess with it.)
6. Preheat oven to 350 and baked 12-14 minutes, until crescent roll appears golden.
7. Let cool and enjoy!!

Recipe :: easy chicken enchiladas


I found this recipe in a diabetic magazine that my mother-in-law left over at my house one day. I'm trying to get back into trying new recipes (three kids put a break on that), and this seemed easy. Looked good, too. So I tried it.

We loved it!!! It has a great flavor, and was super easy to throw together in the crock pot then leave it be. I paired it with some mexican rice. Perfect! 

Easy Chicken Enchiladas

Ingredients
1 lb chicken break halves
1 10.5 oz cream of chicken soup
1/2 cup salsa
1 4 oz can of green chiles
1 tsp chili powder
1/2 tsp cumin
4 cups baby lettuce mix
8 6 in. corn tortillas, warmed
1/2 cup shredded mexican cheese blend

Instructions
1. Place chicken in 1 1/2 quart slow cooker. In a small bowl combine soup, chiles, salsa, chili powder, and cumin; pour over chicken in cooker. Cover and cook on low heat setting 4 to 5 hours.

2. Remove chicken and place in a medium shallow bowl, then shred meat with two forks. Add half of the sauce from the cooker to the shredded chicken and toss to coat.

3. Line a platter with baby lettuce mix. Place 1/3 cup of chicken mix and 1 tsp of cheese down the center of each tortilla; roll up. Arrange on the platter and spoon remaining sauce over enchiladas, then sprinkle with remaining cheese.

Recipe :: taco bake



Ingredients:
1 pound ground beef
1 packet taco seasoning
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Directions:
1. Brown your meat, and drain any gease.
2. Add taco seasoning.
3. Turn your heat off and mix in the cheese (I used shredded cheddar cheese since I didn't have the other), stirring it thoroughly.
4. Preheat oven to 350 and spray your dish with nonstick spray.
5. Place a tortilla on the botton... then your meat/cheese mix... then your shredded Mexican cheese.
6. Repeat step 5 a second time.
7. Top with the last tortilla and some cheese.
8. Bake 15-20 minutes, or until cheese is melted.

Recipes :: baked cheese balls


Ingredients
String cheese
Bowl of milk
Bowl of italian bread crumbs

Directions
1. Cut up string cheese into 4 pieces.
2. Dip in milk.
3. Dip in bread crumbs.
4. Bake at 425 degrees for 7-10 minutes.

Fast, flavorful, and a great snack!

Recipe :: Taco Casserole



Ingredients


1 7oz bag Nacho Cheese Doritos, crushed
1 lb hamburger, browned
1 pkg taco seasoning, mixed with meat
1 8oz pkg shredded cheddar cheese
1 8oz pkg shredded mozzarella cheese
Shredded lettuce
Sliced tomato


Directions

Brown your meat and add the taco seasoning. 
Shred your lettuce and cut up your tomato (I cut it up in small cubes).
Layer your ingredients: crushed chips, seasoned meat, 2/3 of both cheeses, lettuce, tomato, and rest of cheese. I added extra chips to the top of mine. Made it more crunchy. 
Bake at 350 degrees for 15 minutes.

Delicious and fast!

Recipe :: Baked Parmesan Tomatoes



Ingredients
4 tomatoes, halved horizontally
1/4 cup freshly grated Parmesan cheese (I used shredded)
1 teaspoon chopped fresh oregano
1/4 teaspoon salt
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil

Directions
1. Preheat oven to 450° F.
2. Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.

Recipes :: Taco Cupcakes


Ingredients
1 pound ground beef
1 (1.25 ounce) package of Old El Paso taco seasoning mix
36 wonton wrappers
1 (16 ounce) can Old El Paso refried beans
36 tortilla chips
2 cups shredded cheddar cheese
Optional toppings: sour cream, diced tomatoes, cilantro, onion

Directions
1. Preheat the oven to 375 degrees. Spray 18 muffin cups with cooking spray.
2. Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
3. Place one wonton wrapper in the bottom of each muffin cup. Layer about 1 Tbsp of refried beans on top of each wonton. Crush one tortilla chip on top of the beans. Top with 1 Tbsp of taco meat and 1 Tbsp of shredded cheese. Repeat the layers again with a wonton wrapper, refried beans, tortilla chips, taco meat, and cheese.
4. Bake for 15-18 minutes or until golden brown.
5. Remove cupcakes from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, or cilantro)

Notes
I used ground turkey, and was only able to make 1 layer. Tastes great! These would be great for a party.

Recipe :: pizza roll


Ingredients
1 roll of dough
Pepperoni
Mozzarella cheese
Italian herbs
Olive Oil
Butter

Directions
1. Roll out dough, and flatten it - use a rolling pin on it a little.
2. Brush, or rub, on olive oil.
3. Cover with pepperoni completely - all the way to the edges.
4. Cover with cheese - same way as pepperoni.
5. Sprinkle a little italian herbs, but not too much.
6. Roll up, starting at one side ending at the other.
7. Spread on some melted butter, with a little garlic powder, if you wish.
8. Put on pan and in the oven at 375 degrees, for 15-25 minutes.

Made one with onions and peppers for my hubby. You can add other things, but be careful since you have to roll it. Don't stuff it too full.


Very good, and quick to make!

Recipe :: cheesy potatoes


Ingredients
potatoes
shredded cheese - I used a mixed blend kind
olive oil
pepper

Directions
1. slice potatoes into rounds
2. toss in bowl with olive oil and some pepper - to your satisfaction 
3. lay potatoes in rows on baking pan and top with cheese
4. bake at 400 for about 10-20 mins - depending how dark you want your cheese and how soft you want your potatoes

Recipe :: broccoli/cheddar/chicken braid


Ingredients
2 cans Pillsbury Original Crescent Rolls
2 cups chicken chunks, cooked
2 cups cheddar cheese
2 cups broccoli, frozen, steamed and chopped
1/2 cup light mayonnaise
1 egg yolk
fresh rosemary

Directions
1. Preheat oven to 375 degrees F
2. On a parchment paper lined cookie sheet, spread both cans of crescents length wise to form a long rectangle.
3. Press each of the seams to form a single layer of dough.
4. In a large bowl, combine chicken, cheese, broccoli and mayonnaise
5. Spread mixture over the center of the croissant dough evenly to create a log.
6. Using a sharp knife, cut horizontal strips 1 inch apart down each side of the crescent dough.
7. Fold the dough strips over the top of the chicken mixture, alternating left and right to create a braid.
8. Brush the top of the braid with a beaten egg yolk and sprinkle fresh rosemary on top.
9. Bake for 28 – 30 minutes until golden brown.


My Thoughts
I was a bit iffy about this recipe. I wasn't sure how I'd like mayonnaise being it. But I went ahead and tried it - and loved it! It makes a big one, so this would be great when guest are over. Or, to have leftovers the next day.
