Recipe :: taco bake



Ingredients:
1 pound ground beef
1 packet taco seasoning
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Directions:
1. Brown your meat, and drain any gease.
2. Add taco seasoning.
3. Turn your heat off and mix in the cheese (I used shredded cheddar cheese since I didn't have the other), stirring it thoroughly.
4. Preheat oven to 350 and spray your dish with nonstick spray.
5. Place a tortilla on the botton... then your meat/cheese mix... then your shredded Mexican cheese.
6. Repeat step 5 a second time.
7. Top with the last tortilla and some cheese.
8. Bake 15-20 minutes, or until cheese is melted.

Recipe :: Taco Casserole



Ingredients


1 7oz bag Nacho Cheese Doritos, crushed
1 lb hamburger, browned
1 pkg taco seasoning, mixed with meat
1 8oz pkg shredded cheddar cheese
1 8oz pkg shredded mozzarella cheese
Shredded lettuce
Sliced tomato


Directions

Brown your meat and add the taco seasoning. 
Shred your lettuce and cut up your tomato (I cut it up in small cubes).
Layer your ingredients: crushed chips, seasoned meat, 2/3 of both cheeses, lettuce, tomato, and rest of cheese. I added extra chips to the top of mine. Made it more crunchy. 
Bake at 350 degrees for 15 minutes.

Delicious and fast!

Recipes :: Taco Cupcakes


Ingredients
1 pound ground beef
1 (1.25 ounce) package of Old El Paso taco seasoning mix
36 wonton wrappers
1 (16 ounce) can Old El Paso refried beans
36 tortilla chips
2 cups shredded cheddar cheese
Optional toppings: sour cream, diced tomatoes, cilantro, onion

Directions
1. Preheat the oven to 375 degrees. Spray 18 muffin cups with cooking spray.
2. Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
3. Place one wonton wrapper in the bottom of each muffin cup. Layer about 1 Tbsp of refried beans on top of each wonton. Crush one tortilla chip on top of the beans. Top with 1 Tbsp of taco meat and 1 Tbsp of shredded cheese. Repeat the layers again with a wonton wrapper, refried beans, tortilla chips, taco meat, and cheese.
4. Bake for 15-18 minutes or until golden brown.
5. Remove cupcakes from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, or cilantro)

Notes
I used ground turkey, and was only able to make 1 layer. Tastes great! These would be great for a party.

Recipes :: pot roast


I make mine for freezing, then pull out and cook in the crock pot when wanted/needed. But if you prefer to cook the day you prepare it, you can do so - just cut out the freezing/dividing part.

Ingredients
Pot Roast - pork roast, rump roast, etc, whatever you fancy
Potatoes
Carrots
Celery
1/2 cup water
Pot roast seasoning

Directions
1. Cut the meat and divide into 2 freezer bags.
2. Cut as many potatoes and carrots into chunks as you want.
3. Cut up a few pieces of celery to throw in for taste - throw in with meat.

When Cooking
1. Let thaw - then place in crock pot.
2. Mix about a 1/2 of the seasoning with 1/2 cup water - pour over meat and veggies.
3. Cook on high for 4 hours, or low for 8 hours.

Recipes :: pizza casserole

Big hit with my family! Even my nephew loved it! 
(he recently moved here from Peru and is only used to peruvian cooking)


Ingredients:
1 bag of Egg Noodles
1 extra large can of tomato sauce
2 bags shredded mozzarella cheese
1 lb. hamburger meat
1 package pepperoni

Directions:
1. Peheat oven to 350.
2. Brown meat; drain. Cook noodles; drain.
3. Layer ingredients: sauce, noodles, meat, cheese - repeat (I had 2 layers)
4. Top with pepperoni.
5. Bake 30 minutes - or until cheese is melted.

Recipes :: Philly cheese steak


Ingredients
1 tablespoon margarine or butter, melted
2 medium onions, sliced
1 lb. boneless beef round steak (1 inch thick), trimmed of fat, cut into 1x1/4-inch strips
2 teaspoons garlic-pepper blend
1/2 teaspoon salt 
1 large green bell pepper, cut into rings
1/4 cup water
1 teaspoon beef-flavor instant bouillon
4 hoagie buns, split
4 (1-oz.) slices provolone cheese, halved

Directions
1 In medium bowl, combine margarine and onions; mix to coat. Sprinkle beef with garlic-pepper blend and salt.
2. In 3- to 4-quart slow cooker, layer half of the onions, all of the beef and the bell pepper. Top with remaining half of onions. In measuring cup, combine water and bouillon; stir until dissolved. Pour over mixture in slow cooker.
3. Cover; cook on low setting for 6 to 8 hours.
4. About 10 minutes before serving, place bun halves, cut side up, on ungreased cookie sheet. With slotted spoon, place beef mixture on bottom halves of buns. Top each with 2 pieces of cheese. Broil 2 to 3 inches from heat until cheese is melted and top halves of buns are toasted. Place top halves over cheese.

Recipe :: Beef Stew Skillet Meal



Ingredients

1 lb lean ground beef

1 14oz can mixed vegetables

1 envelope beef stew seasoning

1 c water

3 c egg noodles

shredded cheese, (I used colby jack)


Directions:

Boil egg noodles according to pkg directions. While noodle are cooking brown ground beef in a large, deep skillet. Add in vegetable, beef stew seasoning, and water.

Add cooked noodles to the beef mixture and stir together. Sprinkle with cheese and enjoy.



My thoughts:

Now this was quick and easy! With 2 kids, I love meals that can be thrown together real quick and doesn't dirty a lot of dishes. And it's good too! I liked a bit more cheese in mine, haha.
