Recipes :: Low Carb waffles


ViShape Waffles

Ingredients
2 scoops ViShape shake mix
1/4 cup egg whites
1 whole egg
1-2 tbsp almond milk or coconut milk
1/2 tsp baking powder

Optional
Cinnamon to your liking
Vanilla stevia to your liking

Directions
Blend ingredients to together and heat up your waffle maker. Spray waffle marker with cooking spray and pour your mix in. Cook until golden. Top with sugar free syrup.

I wanted something different than a shake for once. So, I got to looking and found this recipe. I tried it out, and loved it! Before tasting it, I was expecting the taste of waffles. This kinda disappointed me. It tastes more like sweet scrambled eggs. Don't get me wrong, it was very good and I will eat it again... but don't expect it to taste like waffles, haha.

Recipe :: mini pancakes


Directions
  1. Make your pancake mix as you normally do.
  2. Pour into light greased muffin pan.
  3. Add chocolate chips, fruit bits, sausage, whatever you like.
  4. Bake at 350 degree for 12-15 minutes.
  5. Enjoy!
Great for tiny hands or on the go, especially when you're in a rush and don't have time to make 1 pancake at a time. I've done this a lot with working now to make sure Little Man eats before I leave.

Recipe :: Quick Cinnabuns


Ingredients
1 can of crescent rolls
Cinnamon/sugar mix - I use splenda

Icing
1 c. powdered sugar
2 tbsp. milk
1 tsp. vanilla

Directions
1. Preheat oven according to crescent rolls package.
2. Prepared the crescent rolls - roll them, and turn the edges in together.
3. Sprinkle cinnamon/sugar mix over rolls.
4. Bake about 15 minutes, until lightly golden.
5. Prepare icing and put over the rolls - I didn't measure when making the icing, I just added a little milk at a time and mixed until I got what I wanted. And I added a bit more vanilla.
6. Eat and enjoy!


Recipe :: French Toast Muffins


Ingredients
1/2 c. sugar - I use slenda
1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk
1/3 c. butter, melted 
1 egg
Cinnamon/sugar mix

Directions
1. Preheat oven to 350.
2. Sift together all dry ingredients.
3. Add wet ingredients and stir until combined, but still a bit lumpy.
4. Scoop batter into muffin pan that has been sprayed with cooking spray.
5. Sprinkle the cinnamon/sugar mix on top.
6. Bake for 20-25 minutes, or until they just start to turn a bit golden at the edges.
7. Let cool, and enjoy!

Have some syrup around to dip them in. Yummy!

Recipe :: homemade pancakes


Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions
  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

My Thoughts
I didn't have any store mix, but wanted to make pancakes for my niece and nephew that spent the night. So I found this recipe and wow. I will never buy store box mix again.
