Recipe :: lighter banana muffins


I make these often. They are delicious!

Ingredients

  • 2 eggs, beaten
  • 3 very ripe bananas, mashed
  • 2 cups all-purpose flour
  • 3/4 cup white sugar (I use Splenda)
  • 1/4 cup fat free milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 10 muffin cups.
  2. In a medium bowl, combine eggs, milk, and bananas. In a separate bowl, mix together flour and sugar. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
  3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

  1. Banana muffins are really good with some chocolate chips thrown in :D Of course, then they are not exactly "light"!
